Why Horeca equipment needs cleaning carefully to ensure quality and safe food.

The cleaning of equipment such as coffee machines, ice machines or cold rooms is provided by the HACCP plan that every food company or activity in the Horeca sector (within the european community) must have according to European regulations nr. 178 of 2002 and nr. 852 of 2004. The cleanliness of equipment is essential for customer safety, but also for the quality of the food and drinks served to consumers. 

For example, coffee machines maintenance is essential. As Capsule House reminds, the cleaning of the machine is necessary in order to obtain a good coffee. Residues, limescale and scale can impair the quality of the coffee in terms of aroma and taste. 

Gruppo Portioli – a company producing coffee and related equipment – has developed a guide to the ordinary maintenance of the coffee machine that focuses on the frequency and the cleaning methods. In fact, it is necessary to use specific products that are odourless, tasteless and harmless to health: moreover, they should be used constantly so that they slow down the formation of new incrustations. 

Another important machine in the Horeca sector is the ice machine. Many believe that it is simply water in solid form, but as reported by the FDA (USA Food & Drug Administration) – it deserves more attention. Actually, ice is a food: so, it must be produced and handled properlylet’s take the ice in cocktails or that comes into contact with food. It is essential that it is produced in machines that have undergone careful filter maintenance and thorough cleaning.  

Finally, an essential part of the Horeca sector’s is the so-called “cold chain”: the Cold Chain Federation defines it as the set of instruments used to produce and store perishable food at a specific temperature, so that it is not contaminated by biological agents that compromise its quality and its hygienic and nutritional properties.  

Our experience has led to the formulation of specific products for the Horeca sector: Moka, SnowPlow and Greed – all suitable for the HACCP plan required for the sector’s activities – are made with “Food Grade” raw materials and therefore they are not dangerous if they come into contact with food. Furthermore, all products are available in bottles of 1 litre and in tanks of 5 and 10 litres capacity. 

MOKA is a chemical product specifically formulated for the maintenance and cleaning of coffee machines and electric kettles. Fast and effective, MOKA enters the working cycle of these devices and removes limestone, residues and mould. Used constantly, it has a preventive action on the formation of new incrustations and extends the life of the machine guaranteeing the taste of the coffee or tea.  

For the cleaning of ice machines, we have formulated SNOWPLOW, a chemical product with rapid and effective action that does not freeze at the normal machine working temperatures. SNOWPLOW removes limestone, residues and mould, descaling the components (tank, nozzle, coil) without damaging them and guarantees the cleaning of the whole appliance. Used regularly, it has a preventive action on the formation of new incrustations and algae.  

Lastly, but not least, GREED is a cleaner specifically formulated for refrigerated environments also for food use such as cells, refrigerators, freezers, wells, etc. GREED quickly and effectively removes food residues, grease, incrustations and mould, sanitizing surfaces and slowing down the formation of new contaminants.
